Zuchinni Baked Oatmeal
Obsessed with this easy baked oatmeal that makes the perfect breakfast. As you've probably noticed, most of my recipes are a "prep on Sunday and eat all week" kind of vibe, and this is another one. Bakes for 25 minutes and lasts ALL week long.

- 1 1/2 cup oats
- 1 scoop vanilla protein powder
- 2 tsp baking soda
- 2 tsp cinnamon
- 2 eggs
- 1/2 cup peanut butter
- 1 cup milk
- 2 tsp vanilla
- 1 cup shredded zuchinni squeezed
- 1/4 cup chocolate chips
Preheat your oven to 390°.
Add oats, protein powder, baking soda, cinnamon, and a dash of salt to a large bowl.
In a large bowl or mixer, add eggs, milk, vanilla, peanut butter, and shredded zuchinni. Mix on high for ~1 minute.
Add dry ingredients to the wet mixture and stir together for 2-3 minutes or until blended well.
Spray a 9x13 baking dish with a non-stick spray and add your oat batter until spread evenly.
Top with chocolate chips or your choice of toppings.
Bake for 20-25 minutes and allow it to cool before cutting.
