Zesty Italian Pasta Salad
My go-to pasta salad recipe for events & parties. It's easy, has so much flavor, you have options for making it higher in protein, and it's packed with veggies. As with 95% of my recipes, it's perfect to make ahead on a Sunday and eat throughout the week! It gets better and better as the dressing has a chance to marinate.

- 4 oz pasta uncooked
- 1/2-1 cup chopped veggies cucumber, pepper, tomato, black olive, green onion are what we use
- 1/2-1 cup colby jack cheese diced
- 1/2-1` cup pepperoni
- 1.5 cups zesty italian dressing add more if needed
Bring a pot of salted water to a boil and cook pasta until done. Strain and run under cold water to stop the cooking process.
Chop all other ingredients and add to a large bowl while pasta cooks.
Add pasta to other ingredients and pour dressing- mixing thoroughly.
Allow to sit in the fridge for an hour to chill and let dressing marinate. Add more dressing before serving if needed.
