Quinoa Salad
AKA tabbouleh, my favorite mediterranean dish that I could always count of grandma making for the holidays. It's packed with SO many delicious flavors and is the perfect side dish for any occasion. It's easy to add your own twist by changing up the mix-ins or adding a tangy dressing. It's all up to YOU!
Salad
- 1 cup quinoa dry
- 1 cup tomato
- 1 cup peppers
- 1 cup cucumber
- 1 cup avocado
- 3/4 cup green onion
- 1/2-1 cup parsley
Dressing
- 1/2-1 cup lemon juice
- 1/3 cup olive oil
Rinse quinoa under cold water and cook using package instructions.
While quinoa cooks, chop all vegetables and add to a large bowl.
Prepare dressing by adding EVOO and lemon juice to a bowl and mix. Set aside.
Once quinoa has cooled, add to the veggie mixture. Stir in dressing and allow to marinate overnight for best flavor!
