Potato Taco Bowls
Starting a new series of easy, healthy meal prepped recipes that can be prepared quickly & eaten throughout the week! When I was teaching full time I was always prepping my lunches on Sunday to prioritize healthy meals and save money. It’s so worth it to spend a short amount of time prepping meals one day a week instead of having to prepare meals each day. Now, having a newborn at home, I still need those easy meals to grab and eat (usually with one hand!)
- 1 lb ground meat
- 1/2 cup diced pepper
- 1 packet taco seasoning
- 1 package diced potatoes 20 oz
- 2 tbsp - 1/4 cup toppings of choice corn, jalapeno, onion, cheese, lettuce, tomato, avocado, sour cream shown
Cook potatoes according to package directions.
Cook taco meat and pepper together, then add taco seasoning and mix.
Layer bowls with potatoes, meat, and your choice of toppings (to be heated).
** Store in refrigerator until ready to eat. Then, microwave for 1.5-2 minutes until cheese is melted. Top with lettuce, tomato, sour cream, avocado, and/or any other cold toppings you choose.
