Easy Chicken Parm Casserole

One of the easiest recipes I've ever made! We always have these items on hand and this is perfect for an "I don't know what to make for dinner" kind of night. It's also SO good heated up the next day, so we tend to make it one weeknight and eat it for a few days when we know we'll have busy nights!

Ingredients
  

  • 1-2 cups diced chicken
  • 4 oz pasta uncooked
  • 1.5 cups marinara
  • 1/2 stick butter
  • 1/2 cup breadcrumbs
  • 1-2 cups shredded cheese
  • 1 cup cooked veggies
  • salt, pepper, garlic powder

Instructions
 

  • Cook chicken & pasta accordingly.
  • In a casserole dish (9x13 if you have it), add a layer of sauce and spread evenly. Mix in cooked chicken, pasta, veggies of choice, salt, pepper, and garlic powder.
  • Melt down butter and add in breadcrumbs until evenly coated. Spoon and even layer on top of casserole and bake for ~15 mins at 425.
  • Add cheese to casserole and bake for ~15 more minutes or until cheese is melted to your liking. Optional: broil for 5 minutes.
  • Top with fresh basil or parsley and enjoy!

Notes

REHEATING: We almost prefer this dish the next day as it's so good heated up! Add a layer of oil to a pan and wait for it to heat up before adding desired amount of pasta. mix in extra red sauce & cook for ~5 minutes on a high heat to crisp everything up!
