Fast food but make it *healthy-ish.* 40 g of protein in this bowl and it’s safe to say this will be on repeat for the foreseeable future. They're packed with so much flavor and I can't get over how easy they are!
1 cupmashed potatoor 1/2 and 1/2 with cauliflower!
1.5-2cupschopped chicken
1/4cupcorn
1-2tbspshredded cheese

Instructions
Cook chicken in the air fryer or oven to make it crispy. While chicken cooks, make your mashed potatoes. Optional cook cauliflower if using!
Heat your corn and gravy (see notes below for a super easy gravy recipe!) and set aside.
Mix cauliflower & mashed potatoes and spread in an even layer in a bowl.
Add chicken, corn, gravy, and shredded cheese & enjoy!
