Copycat KFC Bowls

Fast food but make it *healthy-ish.* 40 g of protein in this bowl and it’s safe to say this will be on repeat for the foreseeable future. They're packed with so much flavor and I can't get over how easy they are!

Ingredients
  

  • 1 cup mashed potato or 1/2 and 1/2 with cauliflower!
  • 1.5-2 cups chopped chicken
  • 1/4 cup corn
  • 1-2 tbsp shredded cheese
  • gravy

Instructions
 

  • Cook chicken in the air fryer or oven to make it crispy. While chicken cooks, make your mashed potatoes. Optional cook cauliflower if using!
  • Heat your corn and gravy (see notes below for a super easy gravy recipe!) and set aside.
  • Mix cauliflower & mashed potatoes and spread in an even layer in a bowl.
  • Add chicken, corn, gravy, and shredded cheese & enjoy!

I use Now Cook This gravy recipe.. it’s SO easy and takes literally 5 minutes! Only 5 ingredients & you definitely have them all in your house already. Can be found on her website!
