Copycat Chick-Fil-A Spicy Southwest Salad
My current lunch obsession! Love to prep everything at the beginning of the week to throw together for a quick lunch that is so flavorful & satisfying.
- 2 cups lettuce
- 1 cup diced chicken
- 2 tbsp corn
- 2 tbsp black beans
- 2 tbsp green chiles or peppers
- 2 tbsp pepitas
- 2 tbsp shredded cheese
- 1/4 cup sliced cherry tomatoes
- 1/4 cup tortilla strips
DRESSING
- 1 cup greek yogurt
- 1/2 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic salt
- 2 tbsp lime juice
Saute corn, beans, and green chiles until softened with a light char.
While that cools, add yogurt, salsa, lime juice, and seasonings to a blender or food processor and blend until smooth. Taste and add optional 1/2 cup more salsa.
Add all salad ingredients to a large bowl and drizzle with the dressing. Optional: Squeeze a lime before you mix for extra flavor.
