Potato Taco Bowls

Starting a new series of easy, healthy meal prepped recipes that can be prepared quickly & eaten throughout the week! When I was teaching full time I was always prepping my lunches on Sunday to prioritize healthy meals and save money. It’s so worth it to spend a short amount of time prepping meals one day a week instead of having to prepare meals each day. Now, having a newborn at home, I still need those easy meals to grab and eat (usually with one hand!)

WHAT YOU’LL NEED

  • Diced potatoes
  • Ground meat
  • Taco seasoning
  • Your choice of mix ins

RECIPE VARIATIONS

  • Potatoes: whatever works for you! Swap for sweet potatoes, rice, omit altogether, whatever you want.
  • Meat: I prefer ground turkey, same thing… use what you want! You could make vegetarian or use a shredded chicken even.
  • Add-ins: my recipe has peppers (cooked with the meat), corn, green onion, jalapeno, shredded cheese, lettuce, tomato, avocado, sour cream, taco sauce.
