Easy Chicken Parm Casserole

One of the easiest recipes I’ve ever made! We always have these items on hand and this is perfect for an “I don’t know what to make for dinner” kind of night. It’s also SO good heated up the next day, so we tend to make it one weeknight and eat it for a few days when we know we’ll have busy nights!

WHAT YOU’LL NEED

  • Chicken
  • Pasta
  • Marinara
  • Butter
  • Breadcrumbs
  • Shredded cheese
  • Veggies of your choice

RECIPE VARIATIONS

  • Chicken: We throw the Just Bare chicken chunks in the air fryer to give it the classic chicken parm crispiness, but you could use anything you have or grab a rotisserie chicken to make it super easy.
  • Breadcrumbs: This can be made without the crispy topping, but we highly recommend!
  • Shredded cheese: Mozzarella, parmesan, whatever you have or prefer!
  • Veggies: We almost always add zucchini, but would be great with broccoli, spinach, onions, anything you and your family enjoy.

Easy Chicken Parm Casserole

Ingredients
  

  • 1-2 cups diced chicken
  • 4 oz pasta uncooked
  • 1.5 cups marinara
  • 1/2 stick butter
  • 1/2 cup breadcrumbs
  • 1-2 cups shredded cheese
  • 1 cup cooked veggies
  • salt, pepper, garlic powder

Instructions
 

  • Cook chicken & pasta accordingly.
  • In a casserole dish (9×13 if you have it), add a layer of sauce and spread evenly. Mix in cooked chicken, pasta, veggies of choice, salt, pepper, and garlic powder.
  • Melt down butter and add in breadcrumbs until evenly coated. Spoon and even layer on top of casserole and bake for ~15 mins at 425.
  • Add cheese to casserole and bake for ~15 more minutes or until cheese is melted to your liking. Optional: broil for 5 minutes.
  • Top with fresh basil or parsley and enjoy!

Notes

REHEATING: We almost prefer this dish the next day as it’s so good heated up! Add a layer of oil to a pan and wait for it to heat up before adding desired amount of pasta. mix in extra red sauce & cook for ~5 minutes on a high heat to crisp everything up!
