Dump & Go White Chicken Chili

Minimal effort + minimal ingredients! One of our favorite busy weeknight dinners or for a cozy Sunday with the crockpot (or stove option!) going while you relax on the couch. This can also be made without a crockpot and just in a large pot! It’s full of so much flavor and tons of protein, I promise it’ll be a family favorite.

WHAT YOU’LL NEED

  • Chicken
  • Rotel (diced tomato and green chile)
  • Ranch seasoning
  • Taco seasoning
  • Great northern beans
  • Corn
  • Cream cheese

RECIPE VARIATIONS

  • Chicken: any kind you prefer or have on hand! Using a rotisserie chicken could cut cooking time down.
  • Great northern beans: We’ve also made this with black beans, swap for whichever you prefer or skip altogether.
  • Corn: making it easy and using a can of sweet corn! Use what works for you.
  • Cream cheese: you can use a DF or low fat version if you prefer.

Ingredients
  

  • 2.5 cups shredded chicken or 2 chicken breast
  • 1 15 oz can corn drained
  • 1 15 oz can beans undrained
  • 1 10 oz can rotel undrained
  • 1 packet taco seasoning 3 tbsp
  • 1 packet ranch seasoning 3 tbsp
  • 8 oz cream cheese

Instructions
 

  • Place chicken on the bottom and add all other ingredients on top.
  • Cook for 2 hours on low / 4 hours on high or until chicken is cooked through.
  • Shred chicken, mix, add your favorite toppings and enjoy!
