Crispy Bruschetta Chicken Flatbreads

One of our favorite twists on pizza Friday! So easy to make & so much flavor— I think I could literally drink this balsamic glaze it’s sooo good 🫣🍕

WHAT YOU’LL NEED

  • Flatbreads
  • Mozzarella
  • Basil
  • Chicken
  • Balsamic glaze
  • Balsamic vinegar
  • Oregano
  • Optional: onion

RECIPE VARIATIONS

  • Flatbreads: we use the Naan flatbreads and LOVE them, use whatever you have or prefer!
  • Mozzarella: fresh! you can chop it up or get the ones that are small balls.
  • Tomato: we just chop up cherry tomatoes because they’re the least juicy so the flatbread doesn’t get soggy. I recommend this, but again use what you have on hand or is easiest for you.
  • Balsamic glaze: I buy mine premade but it’s suuuuper easy to make. Just heat 1 cup balsamic vinegar on the stove with 1/4 cup brown sugar- once sugar is dissolved, reduce heat and simmer until it thickens up.
  • Onion: not a raw onion fan over here… but definitely plays an important part in bruschetta.. so add if you enjoy!

Crispy Bruschetta Chicken Flatbreads

Ingredients
  

  • 1 cup mozzarella diced
  • 1 cup tomato diced
  • 3-4 basil leaves
  • 2 chicken breast
  • 2 flatbreads
  • 2 tbsp balsamic glaze
  • 1/2 cup balsamic vinegar
  • oregano

Instructions
 

  • Add chicken breast to a baking dish and season with oregano. Pour balsamic vinegar over chicken and bake at 425 for 15-20 minutes until cooked through.
  • While chicken cooks, add mozzarella, basil, 2 tsp oregano, optional onion, and tomato to a bowl. Brush flatbread with olive oil and put directly on the rack for 5-10 minutes.
  • While flatbread is getting crispy, shred your chicken and mix with the leftover vinegar in your baking dish. Add balsamic glaze to your bruschetta mixture.
  • When flatbread is crispy, spread 1 tbsp of pesto before adding chicken and bruschetta.
  • Bake for 5-10 more minutes, drizzle with extra glaze, and enjoy!
