Copycat Chick-Fil-A Spicy Southwest Salad

My current lunch obsession! The chick-fil-a salad has a serious chokehold on me and I knew I had to find a way to make it at home. Love to prep everything at the beginning of the week to throw together a quick lunch that is SO satisfying and flavorful. I hope you enjoy this recipe as much as I have been!

WHAT YOU’LL NEED

  • Lettuce
  • Chicken
  • Corn
  • Black Beans
  • Green chiles or peppers
  • Pepitas
  • Shredded cheese
  • Cherry tomatoes
  • Tortilla strips

Optional for dressing:

  • Greek yogurt
  • Salsa
  • Lime juice
  • Cumin, chili powder, garlic salt

RECIPE VARIATIONS

  • Chicken: Use anything you have on hand or prefer. We use the Just Bare chicken chunks in the air fryer.
  • Corn, beans & peppers: I roast mine on the stove and store in the fridge or freezer for the week.
  • Green chiles: I prefer these for flavor, but you can swap for your preferred pepper.
  • Tortilla Strips: optional but SO good if you get the southwest flavored ones.
  • Greek yogurt: Swap for cottage cheese if you prefer.

Copycat Chick-Fil-A Spicy Southwest Salad

My current lunch obsession! Love to prep everything at the beginning of the week to throw together for a quick lunch that is so flavorful & satisfying.
Servings 1 salad

Ingredients
  

  • 2 cups lettuce
  • 1 cup diced chicken
  • 2 tbsp corn
  • 2 tbsp black beans
  • 2 tbsp green chiles or peppers
  • 2 tbsp pepitas
  • 2 tbsp shredded cheese
  • 1/4 cup sliced cherry tomatoes
  • 1/4 cup tortilla strips

DRESSING

  • 1 cup greek yogurt
  • 1/2 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic salt
  • 2 tbsp lime juice

Instructions
 

  • Saute corn, beans, and green chiles until softened with a light char.
  • While that cools, add yogurt, salsa, lime juice, and seasonings to a blender or food processor and blend until smooth. Taste and add optional 1/2 cup more salsa.
  • Add all salad ingredients to a large bowl and drizzle with the dressing. Optional: Squeeze a lime before you mix for extra flavor.
