Copycat KFC Bowls

Fast food but make it *healthy-ish.* 40 g of protein in this bowl and it’s safe to say this will be on repeat for the foreseeable future. They’re packed with so much flavor and I can’t get over how easy they are!

WHAT YOU’LL NEED

  • Mashed Potato
  • Mashed cauliflower (I promise you won’t even know!)
  • Chicken
  • Shredded cheese
  • Corn
  • Gravy

RECIPE VARIATIONS

  • Mashed potato / cauliflower: You won’t even taste the mashed cauliflower! Easy way to sneak in vegetables and keep the carbs down (if you’re tracking!) but of course you can skip and use all potato. Life hack: premade mashed potatoes and cauliflower.
  • Chicken: we use the Just Bare chicken chunks but anything works!!
  • Gravy: I have been using a recipe from Now Cook This- it’s SO easy to make, you can find it HERE.
  • Corn / cheese: whatever you have / prefer!

Ingredients
  

  • 1 cup mashed potato or 1/2 and 1/2 with cauliflower!
  • 1.5-2 cups chopped chicken
  • 1/4 cup corn
  • 1-2 tbsp shredded cheese
  • gravy

Instructions
 

  • Cook chicken in the air fryer or oven to make it crispy. While chicken cooks, make your mashed potatoes. Optional cook cauliflower if using!
  • Heat your corn and gravy (see notes below for a super easy gravy recipe!) and set aside.
  • Mix cauliflower & mashed potatoes and spread in an even layer in a bowl.
  • Add chicken, corn, gravy, and shredded cheese & enjoy!

I use Now Cook This gravy recipe.. it’s SO easy and takes literally 5 minutes! Only 5 ingredients & you definitely have them all in your house already. Can be found on her website!
