3 Ingredient Protein Bagels

10g of protein for a fluffy bagel? No brainer for me! My favorite breakfast with eggs & bacon, lunch with turkey & cheese, or a sweet snack with peanut butter & fruit. I promise you will LOVE these!

WHAT YOU’LL NEED

  • Flour
  • Greek yogurt or cottage cheese
  • Baking powder
  • Salt (okay I guess that makes it 4 ingredients!)

RECIPE VARIATIONS

  • Flour: whatever kind! Been using King Arthur or Bob’s Red Mill for the best results.
  • Yogurt: plain greek yogurt is what I use (only because it takes less effort to not blend the cottage cheese, lol) but you can use either one!
  • Baking powder: do NOT skip! The exact 2.5 tsp is what makes them fluffy!
  • Salt: add more or less depending on what you prefer.
  • Toppings / mix-ins: I have been topping with sesame seeds, but you can mix berries or cinnamon into the dough or top with whatever you prefer!

Servings 4 bagels

Ingredients
  

  • 1 cup flour
  • 1 cup greek yogurt or cottage cheese
  • 2.5 tsp baking powder
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 375.
  • Mix all ingredients until dough is formed— sometimes this can take 5-7 minutes, trust the process!
  • Form into bagel shape (see notes for suggestions) and place on a baking sheet.
  • Brush with egg wash (just 1 egg, whisked) and top with your choice!
  • Bake for 25 minutes, then allow to sit for 10-15 minutes before cutting. (Don’t skip the waiting!!!)
  • Store in the fridge & enjoy!

Notes

— for shape, I roll mine into a ‘hot dog’ shape and then put the ends together to form the bagel shape.
— you can also roll into a ball, flatten in your hands, then just make your hole in the middle with your finger. they will still turn out but won’t be that ‘perfect’ bagel shape.
— DON’T cut before allowing them to sit for 10-15 mins! they will be gummy and not fully set. it’s worth the wait!
