Southwest Chicken Salad

This is probably my favorite recipe so far because it’s so easy & has SO much flavor. Tons of different ways to eat it and you can add in whichever ingredients you prefer. also, perfect if you don’t have access to a microwave during the day! These are the 1 cup bowls I’m using to store them, they’re the perfect size!

WHAT YOU’LL NEED

  • Shredded chicken
  • Your choice of veggies
  • Plain greek yogurt
  • Mayo
  • Taco seasoning

RECIPE VARIATIONS

  • Chicken: Leftovers, rotisserie, whatever you prefer & is easiest!
  • Dressing: If you’re not a fan of greek yogurt, you can use sour cream, all mayo, or blended cottage cheese.
  • Mix ins: Recipe is made with corn, pepper, tomato, green onion, green chiles. Use whatever YOU want!

Ingredients
  

  • 1 cup shredded chicken
  • 2 tbsp – 1/4 cup mix ins of choice corn, pepper, tomato, green onion, green chiles
  • 3/4 cup plain greek yogurt sub for sour cream, mayo, or blended cottage cheese
  • 2 tbsp mayo
  • 2-3 tbsp taco seasoning

Instructions
 

  • Add cooked (and cooled) chicken with your choice of mix ins to a large bowl.
  • In a separate bowl, mix Greek yogurt, mayo, and taco seasoning.
  • Add dressing to your chicken salad and mix, coating evenly.
  • Store in the fridge and enjoy!
