Pesto Shrimp Pasta
This one is on my list of ‘easy dinners when I want something delicious but don’t want to spend forever in the kitchen.’ It takes less than 20 minutes to make and is packed with flavor (and protein!) Take it up a notch by adding vegetables or fresh herbs.
WHAT YOU’LL NEED
- Shrimp
- Pasta of choice
- Pesto
- Cherry tomatoes
- Chili powder
- Onion powder
- Garlic
RECIPE VARIATIONS
- Shrimp: Fresh or frozen! If seafood isn’t your thing, swap for a protein of your choice.
- Pesto: Homemade or store bought, whatever you prefer. Add or decrease amounts based on your liking.
- Cherry Tomatoes: Any tomato is fine, cherry adds the perfect sweetness. Sun dried tomatoes would be delicious too!
- Pasta: Any kind you want!
- Extras: Have fun and experiment by adding spinach, broccoli, zucchini, or anything you’d like!

Pesto Shrimp Pasta

- 8 oz shrimp
- 5 oz pasta uncooked
- 3/4 cup cherry tomatoes chopped
- 2 tbsp pesto
- 1 tbsp garlic
- 1 tbsp olive oil
SHRIMP SEASONING
- 1 tbsp chili powder
- 1 tsp salt
- 1 tsp onion powder
- 1/2 tsp pepper
Bring 2 quarts of water to a rolling boil and add pasta.
While pasta cooks, add olive oil and garlic to pan and heat for ~2 minutes on medium heat before adding tomatoes. Cook for 3-4 minutes until softened.
While tomatoes soften, toss shrimp in seasoning mixture.
Push tomatoes to the edges of your pan and add seasoned shrimp to the center. Cook for ~2 minutes, flip, and cook for an addition 2 minutes before removing from heat.
Strain pasta and add to your shrimp and tomato mixture. Add pesto and stir until evenly coated.
