Pesto Shrimp Pasta

This one is on my list of ‘easy dinners when I want something delicious but don’t want to spend forever in the kitchen.’ It takes less than 20 minutes to make and is packed with flavor (and protein!) Take it up a notch by adding vegetables or fresh herbs.

Pesto Shrimp Pasta

Ingredients
  

  • 8 oz shrimp
  • 5 oz pasta uncooked
  • 3/4 cup cherry tomatoes chopped
  • 2 tbsp pesto
  • 1 tbsp garlic
  • 1 tbsp olive oil

SHRIMP SEASONING

  • 1 tbsp chili powder
  • 1 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp pepper

Instructions
 

  • Bring 2 quarts of water to a rolling boil and add pasta.
  • While pasta cooks, add olive oil and garlic to pan and heat for ~2 minutes on medium heat before adding tomatoes. Cook for 3-4 minutes until softened.
  • While tomatoes soften, toss shrimp in seasoning mixture.
  • Push tomatoes to the edges of your pan and add seasoned shrimp to the center. Cook for ~2 minutes, flip, and cook for an addition 2 minutes before removing from heat.
  • Strain pasta and add to your shrimp and tomato mixture. Add pesto and stir until evenly coated.
