Meal Prep Breakfast Burritos

Been making these for the past few weeks now and they are the perfect quick & easy breakfast! I wrap them in tinfoil and store them in the freezer, heat for 2 mins in the morning and they’re delicious! 🍳🌯

WHAT YOU’LL NEED

  • Eggs
  • Cottage cheese
  • Shredded cheese
  • Diced peppers / onions
  • Sausage
  • Tortillas
  • Garlic powder / salt / pepper

RECIPE VARIATIONS

  • Cottage cheese: you can blend your cottage cheese beforehand if you prefer, or you can skip it altogether. If you do skip it, add in 2-3 extra eggs.
  • Cheese: we used cheddar for the best flavor, use whatever you want or skip!
  • Veggies: I used a frozen bag of peppers and onions, as always use what you like.
  • Tortillas: I just used medium size flour tortillas! They were the best size for the amount, but you could use burrito size and add in more egg bake if you want something bigger.

Ingredients
  

  • 6 eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese
  • 1.5 cup diced onions and peppers
  • 6 sausage patties a little over 1/2 lb
  • 8 tortillas
  • garlic powder
  • salt / pepper

Instructions
 

  • Preheat oven to 350. Spread peppers and onions on a baking sheet and top with sausage pieces. Bake for 10-15 minutes until sausage is cooked.
  • While veggies and sausage cook, whisk eggs, cottage cheese, and seasonings together. If preferred, blend cottage cheese before mixing.
  • Pour egg mixture over your sheet pan with veggies & sausage and spread evenly. Top with cheddar and bake ~15-20 minutes until egg is cooked through. Times may vary depending on pan / oven.
  • Heat tortillas in the microwave for 10ish seconds to soften. Optional: add laughing cow cheese wedge to tortilla. Slice eggs and place in tortilla, wrapping tightly. Place on a baking sheet seam down.
  • Bake for 10-15 minutes until tortillas are golden- you can flip halfway if you prefer but this isn’t necessary.6. Wrap in tinfoil or parchment paper and store in the freezer. To heat, remove wrapping and roll in a paper towel. Microwave for 1.5-2 minutes and enjoy!

Notes

-You can skip the cottage cheese and add in 3 or 4 more eggs if you prefer.
