Chicken Rice Salad

This is a really special post as this recipe is my grandma’s who passed away in 2022. Her house was always filled with laughter & love around different homemade foods. In 2011, she gifted all of her children and grandchildren a homemade recipe book so that we could continue to make these foods with our own families. This recipe is one of the BEST dishes she ever made with the most refreshing & perfect blend of flavors.

Chicken Rice Salad

Ingredients
  

Salad

  • 1 cup jasmine or white rice uncooked
  • 1 box Ben's long grain and wild rice or plain wild rice
  • 2 cups chopped chicken any kind, rotisserie is best
  • 1/4 cup pine nuts
  • 1/2-1 cup chopped parsley
  • 1 cup chopped green onions
  • 1 cup chopped celery

Dressing

  • 1/4 cup EVOO
  • 1-2 tsp minced garlic
  • 1/3-1 cup lemon juice
  • 1-2 tsp mint

Instructions
 

  • Cook white rice and wild rice according to package directions.
  • Boil chicken breast and dice into small chunks.
  • While rice and chicken cook, chop green onion, celery, and parsley.
  • Whisk together dressing ingredients in a small bowl and set aside. Optional: Add in zest from 1 lemon.
  • Heat a small pan and add pine nuts. Cook on medium-high heat for ~3-5 minutes until they are toasted.
  • Add chicken, rice, pine nuts, green onion, celery, and parsley to a large bowl and mix. Top with dressing and mix thoroughly.
    Allow salad to cool in the fridge before enjoying.
