Cheesy Potato Egg Bites

New breakfast hyperfixation! Had these a few weeks ago at Starbucks and haven’t stopped thinking about them since so I knew I had to make my own. Sooo easy to make and store in the fridge for a super quick healthy breakfast!

WHAT YOU’LL NEED

  • Eggs
  • Milk
  • Diced Potatoes
  • Shredded Cheese
  • Chives
  • Bacon
  • Garlic Powder, Onion Powder, Salt/Pepper

RECIPE VARIATIONS

  • Potatoes: Diced potatoes work best, you could use hash browns too. Make sure they are cooked!
  • Shredded Cheese: Whichever kind you prefer!
  • Bacon: Swap for your choice of meat or skip.

Cheesy Potato Egg Bites

Servings 12 bites

Ingredients
  

  • 1/4 cup milk
  • 1 cup diced potatoes cooke
  • 1 cup shredded cheese
  • 1-2 tbsp chives
  • 4 strips bacon cooked & chopped
  • 1 tsp garlic powder, onion powder, salt, dash of pepper

Instructions
 

  • Preheat oven to 350.
  • Mix all ingredients in a large bowl and scoop one spoonful at a time into baking dish- careful not to overfill.
  • Bake for 10 minutes or until they are cooked through and enjoy!
