Cheesy Green Chile Chicken Dip

My dad made this dip all the time when I was a kid and now it’s a game day staple in our house. My husband would tell you it’s his favorite football Sunday snack that I make, so as I always say, that’s a winner in my book. 😉 It’s the perfect mix of cheesy but spicy… just trust me on this one I promise you will LOVE it!

WHAT YOU’LL NEED

  • Pepper jack cheese
  • Monterey jack cheese
  • Chicken
  • Salsa verde
  • Great northern beans
  • Green chiles

RECIPE VARIATIONS:

  • CHEESE: If you prefer less spicy, swap the pepper and monterey jack cheese amounts.
  • CHICKEN: Use whatever you have on hand– perfect for a rotisserie chicken!
  • SALSA: any kind works, be sure to add this right at the end and do NOT mix right away!
  • BEANS: This can be made without them but I highly recommend trying it with them- they add a lot! If you do skip, add 1/4 cup of water or chicken broth in place of it.
  • GREEN CHILES: These add lots of flavor, don’t skip! If anything, add extra!

Cheesy Green Chile Chicken Dip

Ingredients
  

  • 16 oz pepper jack cheese
  • 8 oz monterey jack cheese
  • 2 cup cooked chicken diced small or shredded
  • 1 jar salsa verde 16 oz
  • 1 can great northern beans 15 oz
  • 1 can green chiles 4 oz

Instructions
 

  • Cube cheese and add to crockpot. Cook for about an hour on high until cheese is melted.
  • Add chicken, beans (undrained), and green Chiles and mix.
  • Add salsa to the top and DO NOT mix. Cover and cook for another hour then stir. Cook additional 30 mins if cheese still needs to melt more.
  • Serve with tortilla chips (or eat as a soup!) and enjoy!

Notes

If you prefer a less spicy version, swap the pepper and monterey jack cheese amounts.
