Easy 5-Ingredient Protein Muffins

Easy protein muffins for your week! Love making these on a Sunday in a bunch of different flavors for breakfasts / snacks throughout the week. Each muffin is 95 calories and 7g of protein!

WHAT YOU’LL NEED

  • Kodiak Pancake/Waffle Mix
  • Eggs
  • Fairlife Milk

RECIPE VARIATIONS

  • Pancake Mix: The protein comes from the Kodiak brand, but you can use a different kind if you prefer.
  • Milk: Fairlife adds protein as well, but you can also use a different kind!
  • hazelnut: add 1 tbsp Nutella
  • birthday cake: add 1 tsp almond extract (to whole batter mixture) and sprinkles
  • PB&J: stuff with PB and add jelly to top
  • Chocolate Chip: top with them or mix into batter

Servings 12 muffins

Ingredients
  

  • 2 cups Kodiak mix
  • 1 cup Fairlife milk

Instructions
 

  • Preheat oven to 350 and mix your ingredients in a large bowl.
  • Spray or line cupcake tins and add in 1 scoop of batter, filling about 3/4 of the way.
  • Add your choice of toppings (see notes for what’s shown in photos.)
  • Bake for 8-10 minutes and enjoy!

Notes
