Meal Prep Hashbrown Casseroles
Loving these for a very filling & satisfying breakfast! Easy to prepare, quick to heat in the mornings, and leaves me feeling full and ready for the day. Been adding avocado to the top of mine & mixing in a variety of veggies. These are the bowls I’ve been using to prep them, super convenient and the perfect size!
WHAT YOU’LL NEED
- Egg
- Milk
- Hashbrowns
- Choice of meat
- Shredded cheese
- Choice of veggies
RECIPE VARIATIONS
- Hash browns: Swap for diced potatoes if you’d like!
- Shredded cheese: I used cheddar, use whatever you prefer.
- Veggies / Meat: Use your choice or skip!
Hashbrowns Casseroles

Been adding avocado to the top of mine & mixing in a variety of veggies. These are the bowls I've been using to prep them, super convenient and the perfect size!
- 2 tbsp milk
- 1/2 cup hashbrowns
- 1/3 cup meat
- 1/4 cup cheese
- your choice of diced veggies
Spray oven safe dishes with a nonstick spray. Add egg and milk and whisk together.
Add in hashbrowns, meat, veggies and mix. Press to make an even layer.
Add a layer of cheese to the top and a sprinkle of salt and pepper.
Bake at 350° for 30-40 minutes until egg is cooked. (Check the middle.)
Store in the fridge until you're ready to eat. Microwave for 1.5 minutes, top with your favorites, & enjoy!
