Bang Bang Shrimp Bowls

Add a little spice to your week with these easy & flavorful bang bang shrimp bowls! We don’t do a ton of seafood often but I’m going to have to start stocking up on shrimp because we loved these so much. One thing I love about shrimp is it cooks SO quickly AND it’s easy to keep on hand because you can keep it in the freezer.

WHAT YOU’LL NEED

  • Shrimp
  • Rice
  • Coleslaw blend (or shredded carrots / cabbage)
  • Blackened seasoning
  • Plain greek yogurt
  • Mayo
  • Sweet chili sauce
  • Rice vinegar

RECIPE VARIATIONS & NOTES

  • Shrimp: You could totally make this recipe with chicken or your choice of meat! If using frozen shrimp, thaw under cool water or in the fridge before cooking.
  • Rice: Swap, omit, whatever you choose!
  • Sauce: If you don’t want to use yogurt, replace it with mayo.
  • Seasoning: If you don’t have blackened seasoning, coat shrimp with paprika, garlic powder, onion powder, salt, and pepper. (add cayenne for extra spice)
  • Spice Level: Add 2 tbsp of sriracha for a spicier sauce.

Bang Bang Shrimp Bowls

Servings 2 people

Ingredients
  

  • 10 oz shrimp thawed
  • 1.5 cups rice uncooked
  • 1.5 cups coleslaw blend
  • 1.5 tbsp blackened seasoning
  • 1/4 cup plain greek yogurt
  • 1/4 cup mayo
  • 1/4 cup sweet chili sauce
  • 1 tbsp rice vinegar

Instructions
 

  • Heat 1-2 tbsp oil in a large pan. Toss shrimp in seasoning and add to pan.
  • Mix all bang bang sauce ingredients— add 3/4 of this to your shrimp and mix to coat shrimp in sauce. Allow to simmer for a few minutes before removing from heat. (Shrimp cooks very quickly!)
  • Layer rice, cooked shrimp, and coleslaw blend and top with remaining sauce.

Notes

  • If using frozen shrimp, thaw under cool water or in the fridge before cooking.
