Sun-Dried Tomato Pasta + Chicken
A huge shoutout to whoever got the world started on this “Marry Me Chicken” recipe because we are OBSESSED. This is our version which is super easy, of course, and has so much flavor I can’t help but say “this is so good” every single time we eat it.
WHAT YOU’LL NEED
- Chicken
- Pasta
- Sun-dried tomatoes
- Chicken stock
- Boursin cheese
- Heavy cream
RECIPE VARIATIONS
- Chicken: Use any kind that you prefer! You could even cut up a rotisserie chicken and throw it in for an even easier process.
- Pasta: We like rigatoni the best, but again, any kind will work. Just be sure to adjust cooking times based on what kind you make.
- Sun-dried tomatoes: I have found that California Sun Dry brand is my favorite, and I usually add a little bit of the oils into my pasta as well. However, any kind will work! If you really love them, add in 1/4 cup more for extra flavor.
- Chicken stock: Even if it’s not chicken, use what you have. Sub for water if you don’t have any.
- Boursin: The garlic & herb one! It adds so much delicious flavor.
- Heavy Cream: If you want extra sauce, add in an extra 1/4 cup of this.
- Note: This recipe is amazing with a serving of toasted slivered almonds on top! It adds the perfect crunch and flavor.
Sun-Dried Tomato Pasta + Chicken

- 2 chicken breast
- 4 oz pasta
- 1/4-1/2 cup chopped sun-dried tomatoes
- 1/4 cup chicken stock
- 1 cup heavy cream
- 1/2 block Boursin garlic & herb cheese
Season chicken with Lowry's, paprika, and garlic powder.
Begin cooking pasta according to directions on package.
While pasta cooks, heat olive oil in a large pan and add chicken. Cook for 5-7 minutes on a medium-high heat before flipping. Remove from pan and set aside covered with tinfoil.
Add chopped sun-dried tomatoes to chicken pan, giving them a stir and cooking for 1-2 minutes.
Add in chicken stock, heavy cream, and Boursin cheese and stir. Let it simmer for 3-5 minutes until blended smoothly.
Add cooked pasta to the sauce and allow to sit while you cut your chicken into bite size pieces.
Add chicken to pasta & sauce, stir, and enjoy!
-If you love sun-dried tomatoes, add in 1/4 cup more at a time.
-This recipe is amazing with a small serving of toasted almonds on top.
