Sun-Dried Tomato Pasta + Chicken

  • Chicken
  • Pasta
  • Sun-dried tomatoes
  • Chicken stock
  • Boursin cheese
  • Heavy cream

Sun-Dried Tomato Pasta + Chicken

Ingredients
  

  • 2 chicken breast
  • 4 oz pasta
  • 1/4-1/2 cup chopped sun-dried tomatoes
  • 1/4 cup chicken stock
  • 1 cup heavy cream
  • 1/2 block Boursin garlic & herb cheese

Instructions
 

  • Season chicken with Lowry's, paprika, and garlic powder.
  • Begin cooking pasta according to directions on package.
  • While pasta cooks, heat olive oil in a large pan and add chicken. Cook for 5-7 minutes on a medium-high heat before flipping. Remove from pan and set aside covered with tinfoil.
  • Add chopped sun-dried tomatoes to chicken pan, giving them a stir and cooking for 1-2 minutes.
  • Add in chicken stock, heavy cream, and Boursin cheese and stir. Let it simmer for 3-5 minutes until blended smoothly.
  • Add cooked pasta to the sauce and allow to sit while you cut your chicken into bite size pieces.
  • Add chicken to pasta & sauce, stir, and enjoy!

Notes

-If you love sun-dried tomatoes, add in 1/4 cup more at a time. 
-This recipe is amazing with a small serving of toasted almonds on top.
