Easy Breakfast Pancake Bites

Obsessing over the EASIEST breakfast recipe to prepare & eat throughout the week. There’s so many different ways to make them and they take less than 20 minutes. I’m one of the work breakfast eaters because I’m usually not hungry or nothing sounds good. However, these have been a game changer for my morning routine!

Pancake Bites

Servings 12 mini pancake muffins

Ingredients
  

  • 1 3/4 cup pancake mix
  • 2/3 cup water
  • 1 scoop protein powder 25g
  • 2 tbsp chocolate chips optional
  • 1/2 cup blueberries optional

Instructions
 

  • Preheat oven to 350°.
  • Stir together pancake mix, protein powder, and water in a large bowl. Add a dash of cinnamon if desired.
  • Fill muffin tins halfway and add topping of your choice.
  • Bake 10-12 minutes at 350. Store in an airtight container in the fridge once cooled.

Notes

If making a mix of blueberry and chocolate chip, cut each measurement in half.
Take away 2 tbsp of water if you choose to omit the protein powder.
